Low Carb Crock Pot Jambalaya

Ingredients

  • 1 cup chopped onions
  • 1 cup chopped green peppers
  • 1 cup chopped celery
  • 2 garlic cloves ( chopped or minced)
  • 1 (28 ounce) cans diced tomatoes undrained
  • 2 cups vegetarian sausage chopped
  • 3/4 lb shrimp peeled, deveined and uncooked
  • 1/8 -1/4 teaspoon hot sauce
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 teaspoon dried thyme
  • 1 tablespoon dried parsley
  • Directions

Instructions

  1. Add all ingredients, except shrimp, and stir well.
  2. Cook on low for 6-8 hours (or on high for 3-4 hours).
  3. If shrimp is uncooked, add to crock pot for last hour (low) or last 1/2 hour (high).
  4. If shrimp is cooked, add to crock pot for last 15 mins of cooking time.
