Carrot cake - low carb
Ingredients
- 2 whole carrots
- 4 whole eggs
- 1 cup coconut oil
- 1 cup Light brown sugar
- 1 1/2 cup rice flour
- 1/2 cup potato starch
- 1/2 cup tapioca flour
- 1 tablespoon baking powder
- 1/2 cup flaxseed flour
- coconut oil to grease the trail
- 1 cup Dark chocolate melted
- 1/2 cup green banana biomass check separate recipe
- 1 tablespoon honey
Instructions
- CAKE
- In a blender mix the carrots, eggs, oil and the light brown sugar.
- In a separate bowl blend the previous mixture to the rice flour, potato starch and tapioca flour. Then add the flaxseed flour and the baking powder. Mix very well.
- Bake it in a preheated oven (350º) for about 35-40 min.
- FROSTING
- Mix the chocolate with the biomass.
- It last for days.
