Dinner In A Pumpkin

Ingredients

  • 1 small to medium Pumpkin prepared
  • 1 large Onion chopped
  • 2 tablespoons Vegetable oil
  • 2 pounds Ground beef
  • 2 tablespoon Soy sauce
  • 2 tablespoon Brown sugar
  • 1 can Cream of Chicken Soup
  • 1 1/2 cups Rice cooked
  • 1 cup Celery

Instructions

  1. Cut top off pumpkin and clean out seeds and pulp. Paint the face on pumpkin with a permanent marking pen or acrylic paint (optional). Preheat oven to 350?. In a skillet saute onions in oil until tender. Add meat and brown. Drain drippings; add soy sauce, brown sugar and soup. Simmer 10 minutes, stirring occasionally. Add cooked rice and celery. Spoon mixture into pumpkin shell.
  2. Replace top and place entire pumpkin on a baking sheet. Bake one hour or until inside meat of pumpkin is tender. Put pumpkin on plate; remove lip and serve. Cooked pumkin is the vegetable.
